PROBLEM TO BE SOLVED: To provide new fried rice cracker having novel palate feeling and flavor, and to provide a method for producing the rice cracker. SOLUTION: This method for producing fried rice cracker comprises such processes that a raw material consisting of glutinous rice is steamed and brought into rice cake, the resultant product is cooled followed by being formed in suitable size and shape, the resultant product is dried so as to have a final water content of 16-18 wt.%, thus brought into rice cracker dough, the dried rice cracker dough is fried in oil at 230-245 deg.C for about 1-2 min followed by being let cool so that the temperature inside the rice cracker falls to about 100 deg.C and being soaked in a seasoning liquid at about 20 deg.C for about 5-10 s, the excess seasoning liquid adhering to the resultant product is removed therefrom with a centrifugal separator and then the resultant product is subjected to finish drying so as to have a final water content of 10-15 wt.%.
