For splitting a carcass 1 suspended by the rear legs 2, splitting taking place from top to bottom, the device, which comprises a support 4 for a cutting tool 3 arranged in order to move vertically, an inner guide 5 and an outer guide 7 which are carried by the support and arranged in order to interact, respectively, with the inner face of the spine 6 and with the back of the carcass 1, at least one of the guides 5, 7 being mobile on the support and being returned towards the spine and the other guide, is characterised in that the movable guide 7 is carried by the support 4 by means of mounting means 11 arranged so that, when the guides bear on the carcass, the outer guide 7 has, relative to the inner guide 5, a downward movement when it approaches it and, conversely, an upward movement when it moves away from it.
