The invention provides a dielectric heating device in the form of a microwave oven (10) which has a plurality of electrically interconnected side walls (24-32) defining a heating cavity (14). The walls are arranged in adjacent pairs which are inclined to each other at an obtuse angle of 108 degree . There is an electromagnetic power source in the form of a magnetron (34) for emitting electromagnetic radiation into the cavity (14), for dielectric microwave heating of contents of the cavity, at a frequency which varies with time and which causes the cavity to act as a multimode resonant heating cavity.
