A bread or cake baking oven is operated under different loads,with different quantities of frozen bread rolls. In a process to optimize the oven operation, the oven is fully charged with a first batch and operated in accordance with a pre-determined time-temperature target profile (1,12) while at the same time measuring and recording the actual time temperature profile (2,8). After the first baking cycle, the integral of the actual time-temperature profile (2,8) from beginning (to) to end (tEV) is calculated, and stored. During further baking cycles, when the oven is not fully charged, the integral of the actual time-temperature profile (4,9) is calculated, continually or at defined intervals as an actual integral value. Baking is terminated as soon as the current integral value exceeds the target integral value.
