PROBLEM TO BE SOLVED: To obtain a temperature and humidity-controlled cabinet for producing bread in which a humidity sensor for detecting humidity in the cabinet is difficult to cause dew condensation and furthermore replacement work of the humidity sensor is readily performed. SOLUTION: In a temperature and humidity-controlled cabinet 1 for producing bread in which the temperature and the humidity in an accommodating room 2 are uniformed by air stream S circulating inside the cabinet C, a circulating duct 22 leading the air stream S in the downward direction is formed on one sidewall 21 located on the opposite side of a cabin 7 in the cabinet C and a humidity sensor 23 is detachably set at the right under of an air outlet 22b of the circulating duct 22.
