PURPOSE: A device for separating a clove of garlic and peeling the skin thereof in which water spray nozzles are crossly disposed at a position being opposite to a garlic inlet device and an unpeeled garlic-recovering vessel is disposed at the rear of a skin-separating device is provided. Therefore, it permits smooth achievement of garlic peeling while preventing damage to the garlic in advance and minimizing the loss thereof. CONSTITUTION: At least two pair of garlic-processing devices(200) for separating a clove of garlic(101) and peeling the skin thereof and skin-separating devices(300) are disposed at a garlic skin-peeling device, each waterway(701, 702) is disposed between a first skin separating device(300a) and a second processing device(200b), and a second separating device(300b) and a drying device(400) to convey the peeled garlic and skin. The garlic skin-peeling device comprises a garlic inlet device(100), the garlic processing device, the skin separating device, the garlic drying device, a garlic discharging device(500), a garlic skin discharging device(600) and a water circulating device(700).
