The invention relates to a novel method for producing hydrolysed collagen based on wet-blue leather shavings or waste. The novel method provides hydrolysed collagen which can provide a filling of 75% as opposed to the 64% achieved with known collagens in the medium. The invention also relates to the hydrolysed collagen produced.
