PROBLEM TO BE SOLVED: To provide a composite bakery food product produced by baking a composite bakery dough including a topping dough of short paste and an inner bread dough, which allows the crispy texture to be maintained with reduction in chronological moisture migration from the inner dough and prevents the topping dough part from peeling off during preservation.SOLUTION: A composite bakery dough includes an intermediate layer of rice cake-like dough in a thin plate form between a topping dough and an inner dough. |
