摘要 Provided is a hydrogen ultrafine bubble alcoholic beverage having an antioxidative function, which is produced by an alcohol reductive fermentation technique and contains acetaldehyde in a reduced amount. Methods are for various types of alcoholic beverages. An oxidative/reductive brewing method and an oxidative/reductive brewing apparatus are provided, both of which are developed based on the promotion of the growth of a microorganism under oxidative conditions and a reductive fermentation technique. In an alcohol reductive fermentation technique, the oxidative decomposition of a product pyruvic acid is prevented, alcohol dehydrogenase can be activated, the production of an alcohol from acetaldehyde that is an intermediate product can be promoted, and acetaldehyde that remains during the alcohol fermentation can be removed by the gas exchange function of hydrogen ultrafine bubbles. This technique can promote the fermentation, can increase the yield of an alcohol, can reduce the amount of acetaldehyde, can develop a new aroma and a mild taste of an alcoholic beverage, and can improve the anti-oxidative function of an alcoholic beverage.
