PROBLEM TO BE SOLVED: To provide a method for producing 3,4,5-tricaffeoylquinic acid capable of efficiently producing 3,4,5-tricaffeoylquinic acid in a short process by a simple operation.SOLUTION: Provided is a method for producing 3,4,5-tricaffeoylquinic acid at least containing: a step A where a compound represented by formula (1) and Meldrum's acid are reacted in a nonprotonic polar solvent to obtain a compound represented by formula (2); a step B where the compound represented by the formula (2) and a compound represented by formula (3) are reacted to obtain a compound represented by formula (4); and a step C where the compound represented by the formula (4) is subjected to deprotection to obtain 3,4,5-tricaffeoylquinic acid represented by formula (5).SELECTED DRAWING: None |
