PROBLEM TO BE SOLVED: To provide edible compositions that are suitable for use in food products and comprise one or more desirable hydrophobic substances, for example, one or more omega-3 fatly acids, water-insoluble flavorings, water-insoluble vitamins and the like.SOLUTION: There is provided complex coacervates that are stable in certain aqueous systems and food products and comprise one or more hydrophobic substances. The coacervates may be used as an ingredient in food products. e.g., in beverages, dry foods, and semi-moist foods.
