The invention relates to carroty chips manufacturing which includes measurement, washing, root peeling, cutting, drying, packing into hermetic packets, at that there shall be carried out stem heating of sliced carrot at a temperature of 65-95 °C at rest steeping of 70-300 sec, and drying is carried out by convective means in two stages at a heat conductor temperature of 65-95 °C to the equal ambient humidity and at the second one of 50-60 °C up to a residual humidity not exceeding 8 %, and is cooled to the temperature of 15-20 °C. Slicing is made 1-10 mm in thickness. |
