摘要 PROBLEM TO BE SOLVED: To provide an oil and fat composition for rice cooking capable of making softness and excellent texture last long even when cooked rice is stored for one day or more, to provide a cooked rice using the oil and fat composition for rice cooking and its manufacturing method, and to provide a processed food manufactured by processing the rice.SOLUTION: There is provided an oil and fat composition for rice cooking containing 100 pts.mass of liquid oil and fat, 0.2 to 2.5 pts.mass of an emulsifier (A): polyglyceryl fatty acid ester which is ester of polyglycerol having a glycerol polymerization degree of 8 to 12 and unsaturated fatty acid or saturated fatty acid having 12 to 24 carbon atoms, 0.5 to 2.5 pts.mass of an emulsifier (B): polyglyceryl ester which is ester of polyglycerol having the polymerization degree of 2 and unsaturated fatty acid having 18 to 22 carbon atoms, and 0.2 to 1.0 pts.mass of an emulsifier (C): glyceryl mono fatty acid ester having the content of unsaturated fatty acid of 75 mass% or more in the total constitutional fatty acid.
