PROBLEM TO BE SOLVED: To provide an emulsified oil and fat composition for roll-in good in ductility at low temperature even with a blend substantially containing no trans acid and to form a beautiful layer and exhibit good melting in mouth and juicy texture in a layered flour puffed food burnt by using the emulsified oil and fat composition for roll-in.SOLUTION: There is provided an emulsified oil and fat composition for roll-in having each value of X3 content and PPP content in a constitutional triglyceride composition of an oil phase, weight ratio of stearic acid/palmitic acid in a constitutional aliphatic acid and content of lauric acid and trans acid satisfying specific conditions, where X:saturated aliphatic acid having even number of 4 to 24 carbon atoms, P:means palmitic acid, X3 is tri saturated aliphatic acid glyceride and PPP is tripalmitin.SELECTED DRAWING: None |
