PROBLEM TO BE SOLVED: To obtain a plastic oil-and-fat composition having a long-lasting natural butter flavor, and having little miscellaneous taste; and to provide a bakery product having a long-lasting natural butter flavor, and having little miscellaneous taste.SOLUTION: There is provided plastic water-in-oil type emulsion satisfying following conditions (I) and (II): (I) 5-50 mass% 'milk and/or cream' are contained; and (II) the content of a milk solid portion other than the 'milk and/or cream' is below 1 pt. mass with respect to a 1 pt. mass solid portion of the 'milk and/or cream.'SELECTED DRAWING: None
