PROBLEM TO BE SOLVED: To provide a gelatinous nutritive acidic composition including protein, fat, and minerals in a balanced manner, having high emulsion stability without requiring sophisticated manufacturing facilities.SOLUTION: The gelatinous nutritive composition contains protein, an emulsifier, fat, a gelatinizer, and water. The solid content of the gelatinous nutritive composition is 3 to 20 mass% relative to the total of the gelatinous nutritive composition. The protein substantially includes a peptide only or a peptide and an amino acid. The emulsifier includes a non-chargeable polymer emulsifier (A) and a (poly)glycerin fatty acid ester (B) having an HLB of 6.0 to 9.5 and a (poly)glyceryl residue molecular weight of 150 to 400. The content of the (A) is 6 to 300 parts by mass and the content of the (B) is 5 to 190 parts by mass relative to 100 parts by mass of the fat. |
