The present invention relates to a method for manufacturing fermented garlic yogurt by using the fermentation of garlic. The method includes the following steps: (a) producing mixture liquid by mixing 2-11 parts by weight of powdered skim milk and 0.4-2.3 parts by weight of glucose with 100 parts by weight of water; (b) inserting peeled garlic into a filtering mesh, impregnating the peeled garlic with the mixture solution, and sterilizing the peeled garlic by heating the peeled garlic; (c) cooling the mixture liquid including the filtering mesh at room temperature; (d) inoculating the mixture liquid with a strain and culturing the mixture liquid with the strain for a predetermined time; and (e) taking out the filtering mesh from the cultured mixture liquid and homogenizing the cultured mixture liquid. According to the present invention, the mixture liquid is sterilized in a state that garlic is inserted in the filtering mesh, and then the filtering mesh is taken out. Therefore, the method for manufacturing fermented garlic yogurt wherein smell and texture of the fermented garlic yogurt can be enhanced by maintaining flavor of the fermented garlic yogurt and preventing the fermented garlic yogurt from having excessive smell. |
