摘要 The present invention relates to a method for manufacturing a carbonated sweet rice drink which satisfies westernized taste of people and corresponds a time trend for beverages by injecting carbon dioxide into a target sweet rice drink, wherein the target sweet rice drink is made by a series of processes which are modified for adding a new flavor in the sweet rice drink without disturbing traditional taste thereof. The method includes: a hard-boiled rice preparing step of soaking washed rice in water for eight hours to expand the rice by a soaking process, steaming the rice at high temperatures of 120-160°C, quenching the rice, and evaporating moisture included in the steamed rice; a hard-boiled rice ripening step of ripening the prepared rice at room temperature or low temperatures; a first functional liquid forming step of mixing the ripened hard-boiled rice with sugar and malt, inserting natural bedrock water into the ripened hard-boiled rice and continuously kneading the ripened hard-boiled rice at the same time to obtain functional liquid with weight reduced by 20% with respect to 100% of the total weight; a malt extract obtaining step of mixing 16.7 wt% of a malt solid material and 83.3 wt% of natural bedrock water and heating the malt solid material and the natural bedrock water at the temperature in a range of 70-90°C for 60 minutes; a second functional liquid forming step of mixing 5 wt% of the obtained malt extract and 95 wt% of the first functional liquid and continuously heating the malt extract and the first functional liquid for two hours until the weight is reduced by 80 wt% with respect to 100 wt% of the total weight to obtain second functional liquid; and a carbonate injection step of injecting a certain amount of carbon dioxide into the second functional liquid, packaging a desired amount of the carbonated sweet rice drink in a metal can or a plastic can or enabling a person to drink the carbonated sweet rice drink as the second functional liquid and carbon dioxide are discharged from a storage container at the same time.
