The present invention relates to a method for producing functional traditional rice cookies by using ginger powder. More specifically, the method for producing functional traditional rice cookies by using ginger powder comprises the following steps: obtaining ginger powder from ginger; obtaining sticky rice powder by grinding steeped sticky rice; producing soybean water by adding Korean distilled liquor (soju) to the soybean water by grinding steeped soybeans in a mixer; kneading the sticky rice powder and the soybean water, steaming the dough in a pot, and then punching and kneading the same; putting a molded article, formed by molding and cooling the dough, into a dryer, forming the shape thereof and drying, aging and fermenting the same so as to produce a base of traditional rice cookies; producing a fried base by frying the base in cooking oil to form the shape; and producing ginger traditional rice cookies by adding ginger powder to a starch syrup in an iron pot and coating popped rice powder on the base. |
