<p>PROBLEM TO BE SOLVED: To provide macaroon confectionery capable of long term storage, with the degradation of texture being suppressed; and a manufacturing method thereof.SOLUTION: A macaroon confectionery 10 includes a filling 12 held between macaroon sheets 11 made of baked mixture including a meringue containing saccharides and egg white and a ground product of nuts. The macaroon sheet 11 has a specific gravity of 0.3 or more and less than 0.5, which is calculated excluding water content. The entire macaroon confectionery 10 has a water content of 6 to 21 mass%. The macaroon confectionery 10 contains ethanol and hermetically packaged.</p> |
