PROBLEM TO BE SOLVED: To provide an easy crystal structure control method for a lipid composition containing at least one or more selected from fatty acids or glycerine fatty acid esters, preferably a lipid composition for food or for cosmetics, and a production method of a fractionated lipid where the lipid composition is fractionated into a solid part and a liquid part.SOLUTION: A particle has a single layer or a layered structure laminated by a non-covalent bond, where one or more kinds selected from the following (a) to (d) are used as a crystal structure control agent: (a) a layered silicate mineral where a constituent tetrahedral layer (T) and octahedral layer (O) consists of a 2:1 unit layer structure of T-O-T; (b) a single layer or a layered carbon; (c) an aromatic carboxylic acid; and (d) theobromine. |
