A process for the production of the polyphenol composition comprises: adsorbing a Camellia sinensis extract on a synthetic adsorbent, contacting a first aqueous organic solvent solution with the synthetic adsorbent to elute a first fraction, and contacting a second aqueous organic solvent solution, which is higher in hydrophobicity than the first aqueous organic solvent solution, with the synthetic adsorbent after the elution of the first fraction, thereby eluting a second fraction with the polyphenol composition present therein wherein said polyphenol composition is derived from Camellia sinensis and comprises a flavonol aglycone and a flavonol glycosides, wherein: a weight ratio [(B)/(A)] of the total contents (B) to (A) is from 1.46 to 18: (A) is a total content of the flavonol aglycone present in solids of the polyphenol composition after hydrolysis as measured by high-performance liquid chromatography, and (B) is a total content of the polyphenol present in solids of the polyphenol composition as measured by the ferrous tartrate method.
