An image processing device, an image processing method and a display device. The device comprises: a receiving module (100) used for receiving input three-colour source data and acquiring the minimum value of the three-colour source data; a data conversion module (200) used for converting the three-colour source data into four-colour data comprising data of the fourth colour and outputting the four-colour data, wherein the numerical value of the data of the fourth colour is determined according to the minimum value of the three-colour source data and a first proportion of the data of the fourth colour; a counting module (300) used for counting the displayed value of the four-colour data; and an adjustment module (400) used for controlling the data conversion module (200) to adjust the first proportion of the data of the fourth colour according to the displayed value of the four-colour data counted by the counting module (300). The first proportion of the data of the fourth colour is adjusted according to the counted displayed value of the four-colour data, thereby adjusting the output value of the subsequent four-colour data, so that the usage condition of a subpixel of the fourth colour is equivalent to that of subpixels of other colours.
