摘要 Provided is a glutinous rice cake choco-pie having sediment structure, in which a filling made of glutinous rice flour is covered by a sediment base with the exterior coated with chocolate to improve texture and flavor, and a manufacturing method thereof. The manufacturing method comprises the steps of: mixing corn starch and glutinous rice flour and then steaming the mixture to produce a glutinous rice flour cake; heating sediments at temperature of 90-120°C and putting in corn starch solved in water to produce a sediment base with 80-90 brix; covering the exterior of the glutinous rice cake with the sediment base or filling the glutinous rice cake to the sediment base to produce a glutinous rice cake having sediment structure; and coating the outer surface of the glutinous rice cake having sediment structure with finishing food materials containing lipids.
