PROBLEM TO BE SOLVED: To provide a manufacturing method of an instant noodle having a flexible texture with a soft surface and a moderately resilient core.SOLUTION: A powder oil and/or a powder emulsifier is kneaded into a noodle dough, from which raw noodles are made. The raw noodles are treated with super heated steam and the dried or subjected to pH adjustment, heat sterilization, and complete sealing. The manufacturing method of an instant noodle having a flexible texture with a soft surface and a moderately resilient core is thereby provided. |
