<p>PROBLEM TO BE SOLVED: To provide a product made from a soybean protein material, more resembling to a tuna-like texture than a conventional product.SOLUTION: A soybean protein raw material, calcium, starch, and water are extruded from a die under heated and pressurized conditions with an extruder. Water is added to the extruded product, which is then processed with amylolytic enzymes and crushed, so that a fibrous soybean protein can be obtained, having fibrous texture, hardness, suppressed resilience, good crispiness, dryness, and looseness, more resembling to a tuna-like texture than a conventional product.</p> |
