摘要 The present invention relates to a method for preparing a bypass protein of which the digestive absorption can intensively occur in the small intestine after passing the cow rumen while the digestive absorption thereof is suppressed. A soybean meal is (1) fermented by using lactic acid bacteria to convert fruit sugar and the like into reactive sugar; and (2) thermally treated to suppress the digestive absorption thereof in the rumen and maximize the digestive absorption thereof in the small intestine. According to method for preparing a bypass protein, the bypass protein can be effectively produced by changing ingredients of the soybean meal through fermentation without a separate additive to induce a Maillard reaction well.
