The invention relates to a process for preparing a double emulsion of a hydrophobic and liposoluble active ingredient, which comprises the following steps: (a) an aqueous solution of at least one whey protein is provided; (b) an aqueous solution of at least one anionic polysaccharide is provided; (c) the whey protein(s) is (are) subjected to a denaturing treatment; (d) an o/w emulsion of the active ingredient in the solution (c) is prepared under hot conditions, then an (o/w)/w emulsion of the o/w emulsion in the solution (b) is prepared under hot conditions, or (e) a w/w emulsion of the solutions (c) and (b) is prepared, then an o/(w/w) emulsion of the active ingredient in the w/w emulsion is prepared under hot conditions. It also relates to the production of particles of said active ingredient from an emulsion thus prepared, and to the particles obtained.
