PROBLEM TO BE SOLVED: To provide a quality measurement device capable of easily and rapidly measuring values related to the quality of a measuring object including fish, seafood, edible meat, animal meat, and processed products produced by using them.SOLUTION: The quality measurement device includes: an extraction container 12 for extracting nucleic acid-related substances contained in a measuring object 8 including fish, seafood, edible meat, animal meat, and processed products produced by using them and becoming an index of freshness and quality; an electrochemical sensor 14 which has at least an action electrode 32 and a counter electrode 34 among three kinds of the action electrode 32, the counter electrode 34, and a reference electrode 36, includes an enzyme fixing part 38 immobilizing an enzyme reacting with the nucleic acid-related substances on a surface of the action electrode 32, and is provided with the nucleic acid-related substances extracted by the extraction container 12, and in which a voltage is applied between the action electrode 32 and the counter electrode 34; and a measuring device 16 for measuring concentrations of the nucleic acid-related substances on the basis of output of the electrochemical sensor 14 and calculating the values related to the quality. |
