PROBLEM TO BE SOLVED: To provide a method for producing 1,5-anhydroglucitol (1,5-AG) by using a microorganism that can convert 1,5-D-anhydrofructose (1,5-AF) to 1,5-AG at a high efficiency.SOLUTION: The production method for 1,5-AG comprises a step of bringing cells of Geotrichum candidum strain having a high ability to convert 1,5-AF to 1,5-AG in contact with 1,5-AF in a culture medium containing a carbohydrate other than glucose to convert 1,5-AF to 1,5-AG, and a step of collecting the generated 1,5-AG. |
