摘要 PROBLEM TO BE SOLVED: To provide a manufacturing method of a processed product of garlic with outer skin on, which allows garlic ingredients to be ingested in various forms corresponding to the preference, health conditions, and age of an ingesting person and permits active ingredients contained in conventionally discarded outer skin to be ingested together with garlic ingredients.SOLUTION: A raw garlic enveloped with outer skin on is directly fermented and matured to produce a black garlic with outer skin on. The produced black garlic with outer skin on is vacuum dried in a frozen state, which is directly processed into powder so as to produce a processed powder product of black garlic. The produced processed powder product of black garlic is fed into a predetermined amount of water or liquid food material so as to be kneaded, which is filtered after a certain period of time to produce a black garlic ingredient-containing liquid food material. Alternatively, a predetermined amount of water or liquid food material is added to the produced processed powder product of black garlic so as to be kneaded to produce the black garlic ingredient-containing liquid food material. Further alternatively, the produced processed powder product of black garlic is solidified to produce a black garlic ingredient-containing solidified food material.
