The present invention relates to a production method of makkoli using low temperature sterilization, more specifically the production method of makkoli which comprises the following steps: steaming grains and drying moisture from the grains to obtain steamed rice for brewing rice wine; adding malt and water to the steamed rice, and fermenting the mixture; and an additional step of low temperature sterilizing the obtained makkoli. The present invention improves the storage properties of the makkoli, and extends the expiration date.
