PROBLEM TO BE SOLVED: To provide a method for easily manufacturing a fatty acid composition, whose saturation fatty acid content is low, from a split fat acid composition including monoacylglycerol at a high yield.SOLUTION: A method for manufacturing a fatty acid composition in which the content of saturated fatty acids is ≤8 mass% includes: (1) a process to gain a fatty acid mixture by adjusting a decomposed fatty acid composition gained by hydrolyzing fat to a content of 80-96 mass% of fatty acid, a content of 0.3-8 mass% of monoacylglycerol, a content of 1-12 mass% of diacylglycerol, and a mass ratio [(DAG)/(MAG)] of diacylglycerol to monoacylglycerol of 0.5-40; (2) a process to cool the fatty acid mixture gained in process (1) into the area from the temperature lower by 2°C than the cloud point of the fatty acid mixture to the temperature lower by 13°C than the cloud point and then mix the fatty acid mixture with a moisturizer water solution to maintain the temperature area; and (3) a process to separate the solid phase and water phase segregated in process (2) from the liquid oil phase to gain a fatty acid composition as a liquid oil phase. |
