Disclosed is a method for determination of falsification of meat of slaughter cattle and poultry at treatment with chlorine. Milled muscular tissue is used, in amount of 2.0-2.1g, with adding 4.0-4.1 cmof distillated water, with soaking during 5-10 minutes to prepare meat-water extraction at ratio 1:2, after that to filtered meat-water extraction amounting to 2.0-2.1 cmreactants are added in sequence: 0.2-0.3 cmof solution of potassium iodide at mass concentration 5.0 %, 0.2-0.3 cmsolution of water-dissoluble starch with mass concentration 2.0 % and 2.0-2.1 cmof concentrated hydrochloric acid, and after that during 1-4 minutes presence or absence of blue color is observed. |
