PURPOSE: A method of making insomnia-free coffee is provided to maintain a certain amount of caffeine for recovering from fatigue and promoting stimulant effect without preventing insomnia. CONSTITUTION: A method of making insomnia-free coffee comprises the following steps. Polygala tenuifoila Willdenow is dipped into licorice root extracts or water which left after washing rice to make Polygala tenuifoila Willdenow extracts. Zizyphi spinosi Semen is dipped into the Polygala tenuifoila Willdenow extracts. The dipped Zizyphi spinosi Semen extracts is dried and stir-fried. Zizyphi spinosi Semen extracts or a concentrated Zizyphi spinosi Semen liquid is manufactured from the stir-fried Zizyphi spinosi Semen. The Zizyphi spinosi Semen extracts or a concentrated Zizyphi spinosi Semen liquid is sprayed onto the fresh coffee beans and dried. The dried coffee beans are pulverized to make up the coffee composition. In the step of making the Zizyphi spinosi Semen extracts or a concentrated Zizyphi spinosi Semen liquid, at least one substance from the Zizyphi spinosi Semen extracts or a concentrated Zizyphi spinosi Semen liquid is made after stir-fried Zizyphi spinosi Semen and Poria cocos, Raphani Semen, white Heolen cum Radix or Hoelen cum Radix is added.
