PURPOSE: A method for extracting oil is provided to extract oil containing phospholipids and omega fatty acids with high stability and improved functionality and quality from fish in high yield, by a simple extraction method. CONSTITUTION: A method for extracting oil containing phospholipids and omega fatty acids comprises a step of preparing a raw material from fish; a step of freezing the raw material; a step of filling an extractor(150) with the raw material; a step of touching the supercritical or subcritical carbon dioxide in the extractor; a step of discharging the supercritical or subcritical carbon dioxide coupled with oil components in the raw material; a step of injecting the oil component-containing supercritical or subcritical carbon dioxide into a distributor and decreasing the pressure of the supercritical or subcritical carbon dioxide to separate the oil components.
