FIELD: food industry.SUBSTANCE: invention relates to engineering fields where drying is to be performed, in particular, during manufacture of food products and/or partially dried products, and deals with a drying chamber with air supply equipped with devices for forced circulation of process air and a rack for the product. The chamber with a rack may be used, in particular, for uncooked smoked sausage drying and ripening. The rack includes frame, installation appliances for placement of products being treated that are to be subjected to drying, such appliances mounted on the frame, as well as at least one ventilation unit positioned on the wheel side and equipped with at least the first diffuser (8) as well as, whenever required, one second diffuser placed on the rack.EFFECT: invention ensures quick and uniform drying of products and any kinds of water-containing substrates to be dried.15 cl, 3 dwg |
