PURPOSE: Colored bean curd having a visual effect, and a producing method thereof are provided to maintain the moisture on the surface of the bean curd for securing the uniform eating texture. CONSTITUTION: A producing method of colored bean curd comprises the following: soaking soybeans in water for 6-12 hours; mixing 2.5kg of soaked soybeans with 13-17L of water, and crushing the mixture; separating solid and liquid from the crushed soybean mixture; stirring the obtained soymilk at 100 deg. C for 30 minutes, and stirring the soymilk at 40-70 deg. C; mixing 90-99wt% of soymilk with selected 1-10wt% of sweet pumpkin extract, 1-10wt% of black soybean extract, 1-10wt% of carrot extract, or 1-10wt% of mulberry leaf extract; inserting brine into the mixture for coagulating the bean curd, and removing the brine; laminating the bean curd by colors, and successively pressurizing the bean curd; and compressing the laminated bean curd to the power of 35kgf for 30-40 minutes. |
