<P>PROBLEM TO BE SOLVED: To provide a modifier used for rice confectionery allowing to obtain rice confectionery which is excellent in swelling properties and has soft palate feeling, and contributing to the improvement of production efficiency of rice confectionery, and to provide rice confectionery dough and rice confectionery produced using the modifier used for rice confectionery. <P>SOLUTION: The modifier used for rice confectionery includes polyglyceryl fatty acid ester in producing the rice confectionery dough and rice confectionery.
