The starch carrier comprises malted cereals, or non-malted cereals, potatoes, yams, sugar cane or cassava. The enzyme concentrate comprising at least one enzyme comprises at least one enzyme starch residue, pentosan, structural proteins and/or storage proteins. Preferred Method: The at least one of enzyme is precipitated, before the mash is heated to a temperature greater than the inactivation temperature of the at least one enzyme to be precipitated. The at least one enzyme is added to the mash before reaching the gelatinization temperature. The at least one enzyme to be added to the mash is precipitated again after a residence time. The method comprises removing a mash flow, separating solids from the mash flow, and subsequently filtering out at least one of enzyme from the mash flow. The mash flow is supplied back into the container after filtering from which the mash flow is previously removed. The filter residues resulting during filtering are obtained by drying.
