A mineral supplement for foods, e.g. for salt, sugar, or flour, is made by forming a homogeneous slurry of an innocuous calcium salt, e.g. tri-or di-calcium phosphate or tetracalcium pyrophosphate, calcium sulphate or calcium carbonate, sodium ferric pyrophosphate, and sodium acid pyrophosphate, drying the slurry, and grinding and then screening the dried product, the salts being within the range of proportions to yield a product having 14.4-28.8 per cent of calcium, 12.4-26.6 per cent of phosphorus, and 0.8-2.9 per cent of iron. To a slurry of 40-80 per cent of tricalcium phosphate, 5-18 per cent of sodium ferric pyrophosphate, and 15-30 per cent of sodium acid pyrophosphate may be added up to 12 per cent of an edible filler such as starch or a cereal flour, and the dried slurry may be ground to pass a 20-mesh but be retained by a 200-mesh A.C.S. screen; such a product wherein the salts are in the relative proportions of 66 per cent of tricalcium phosphate, 9 per cent sodium ferric pyrophosphate, and 25 per cent sodium acid pyrophosphate has, in 1 per cent aqueous slurry, pH 5.95, and does not accelerate the rancidifying of cereal products. |
