FERULIC ACID BONDING TYPE SACCHARIDE AND PRODUCTION METHOD THEREFOR

PROBLEM TO BE SOLVED: To enable to obtain a ferulic acid bonding type saccharide with a high yield, which ferulic acid bonding type saccharide is difficult in industrial utilization because enzyme reaction technology and a chemical treatment method cause ferulic acid disengagement and oligosaccharide molecular weight decrease and are heavy in process load.

SOLUTION: The ferulic acid bonding type saccharide such as arabinooligosaccharide or galactooligosaccharide having a ferulic acid group is produced by using a material containing pectin derived from a plant cell wall and utilizing a hydrothermal treatment process for applying to the pectin-containing material the hydrothermal treatment under pressure control of higher than the saturated vapor pressure and on the treating conditions of 160-180°C heating temperature and 5-15 min heating time.
