PURPOSE: A producing method of radial ray-radiated pork sausage without the bad smell of radial rays is provided to use kimchi powder for removing the smell of the radial rays. CONSTITUTION: A producing method of radial ray-radiated pork sausage comprises the following steps: radiating radial rays to pork until the total absorbed dose of the radial ray is 1-10kGy; preparing kimchi powder; and mixing the kimchi powder with the pork to obtain emulsified sausage. A radiation source for the radial rays is a gamma-ray, an electronic beam, or an X-ray. The kimchi powder is obtained by juicing kimchi, and hot-air drying the kimchi at 50-70 deg C for 10-14 hours before crushing. The sausage contains 60wt% of pork, 20wt% of pork back fat, 20wt% of ice, and 0.5wt% of kimchi powder, and is inserted into a collagen casing before heating.
