PURPOSE: Pickled sea tangle and a producing method thereof are provided to offer chewy and soft texture of the sea tangle by low temperature aging the sea tangle after washing with sea water, steaming, and mixing with seasoning liquid. CONSTITUTION: A producing method of pickled sea tangle comprises the following steps: washing sea tangle with sea water, and steaming the washed sea tangle for 5-10 second using 95-100 deg C sea water; cooling the steamed sea tangle in 15-25 deg C fresh water; cutting the cooled sea tangle; mixing 40-60wt% of cut sea tangle with 40-60wt% of seasoning liquid; and low temperature aging the mixture at 0-5 deg C for 24-72 hours. The seasoning liquid is obtained by mixing soy sauce, soju, vinegar, sugar, onion, brewing vinegar, garlic, and Cheongyang pepper, and boiling the mixture for 30 minutes-2hours before filtering. |
