The process uses a current of dehumidified air at a temperature of 2-15[deg] C to dry food products in a discontinuous manner for successive loads. An independent claim is included for a device for drying a non-packaged food product comprising at least two product containers (1, 2) through which a current of air, generated by two fans (6, 7), is passed through small holes. One of the containers is used for drying while a second container is used for discharging the dried product. The containers take the form of a cylindrical drum (3) with perforated walls (4, 5).
