<P>PROBLEM TO BE SOLVED: To provide a process for producing a malt-based drink that can regulate components affecting the flavor, foam quality, flavor stability and suspension stability of the malt-based beverage by separating dried germinated barley used as a raw material for the malt-based beverage by tissues. <P>SOLUTION: The process for producing the malt-based beverage includes separating the germinated barley into endosperm, endothelial layers, husks, acrospires, malt rootlets and unseparated fractions, blending the separated by-tissue fractions individually or in a plurality of kinds, and further blending wholegrain malt before separated to prepare the raw material for the malt-based beverage, thus regulating the components affecting the flavor, foam quality, flavor stability and suspension stability of the malt-based beverage. <P>COPYRIGHT: (C)2012,JPO&INPIT |
