摘要 <P>PROBLEM TO BE SOLVED: To provide a dried fish with strong fleshy scent which has fleshy scent more than that of a dried fish manufactured by a conventional process at least, stably, simply, and industrially. <P>SOLUTION: At least 45 ppb of furaneol and at least 30 ppb of methional are made to be included in 3% of a soup stock of a dried fish.
