PROBLEM TO BE SOLVED: To provide a composition for producing a dairy product, hardly generating aggregation when heat sterilizing at a high temperature (for instance, ≥70°C) and excellent in heat stability even when using a raw material containing whey protein unsubjected to a modifying process to improve heat stability. SOLUTION: This composition for producing the dairy product includes whey solid, nonfat milk solid, and water. In the composition for producing the dairy product, a percentage content of milk fat is 0-0.5 mass%, and a percentage content of whey solid is 0.5-4.0 mass%. A percentage content of nonfat milk solid in the composition is preferably 3-15 mass%. It is possible to add milk fat etc. to the composition after heat sterilizing. COPYRIGHT: (C)2011,JPO&INPIT
