PROBLEM TO BE SOLVED: To provide a method for producing crystalline particles of difructose anhydride III (DFA III) having a particle distribution in which ≥80% particles distribute between 150-499 μm. SOLUTION: The method comprises obtaining crude DFA III syrup by deactivating a reaction-finished solution prepared by dissolving inulin and subsequently acting a bacterium belonging to the genus Arthrobacter, adding powdery active charcoal to treat the syrup which is filtered through diatomaceous earth and concentrated, added with seeds of DFA III and cooled by a cooling crystallization machine to precipitate crystals, and subjected to solid-liquid separation, subsequently the crystals are air-dried and treated by a particle size sorter.
