摘要 The invention relates to a process for production of “MKS”, bacterial preparation of direct application for production of raw dried and raw smoked meat products, which provides for the preparation of nutrient medium based on peptone with addition of growth substances, introducing of inoculum, containing strain of lactic acid bacteria Lactobacillus plantarum IMB B-7058, Lactobacillus casei subsp. rhamnosus IMB B-7060 and strain of staphylococcus Staphylococcus simulans IMB B- the ratio of 1:1:1, its combined cultivation at the temperature of 32±1 °C with batch or continuous neutralization to 6.4±0.1 pH units for 13±0.5 hours and isolation of biomass, its mixing with protective medium, freezing and drying of cell suspension, grinding of produced bacterial concentrate, mixing of dry bacterial concentrate with a filling agent. According to the process the active bacterial preparation of direct application is produced with high content of starter cultures for production of fermented meat products, providing for assured biochemical transformations – reducing of acidity, reducing of sodium nitrite content, promotes formation and stabilization of red color of meat.
